Ingredients
- ½ cup plus 2 tbsp sugar
- 1 ½ tsp ground cinnamon
- 4 cups vegetable oil
- 1 cup plain oats
- ½ cup rice flour
- 2 tbsp cornstarch
- 1 tsp baking powder
- ¾ tsp salt
- 1 large egg
- ½ cup (or more) soda
- 2 large crisp apples, peeled, cored and sliced into thin rings
Preparation guide
- Whisk ½ cup sugar and 1 tsp cinnamon in a shallow bowl; set aside.
- Pour oil (3″ high) in a pot. Heat over medium-high heat.
- Meanwhile, grind oats to a coarse powder. Transfer to a large bowl and add the rice flour, cornstarch, baking powder, salt, and remaining 2 tbsp sugar and ½ tsp cinnamon.
- Whisk in the egg and ½ cup soda, adding more soda by the tablespoonful until you reach the consistency of pancake batter.
- Dip apple rings in the batter and fry, turning occasionally, until golden brown and crisp. This will take about four minutes.
- Transfer fritters to a paper towel-lined plate; drain and then toss in cinnamon sugar.
